The role
A family-owned winery on the NSW Sapphire Coast is hiring a full-time Chef de Partie for its restaurant. It’s a permanent job, not a season.
The kitchen is small and the standard is high. The head chef grew up in Piedmont and came up through a Michelin kitchen; the cooking is gastronomic modern Italian built on South Coast produce, written as three-course menus. You’d run your section under him and one senior chef — six services a week, plus weddings. With three of you in the kitchen, you’ll cook across the whole menu.
What’s on offer
- $75,000–$85,000 plus superannuation, depending on experience.
- No accommodation. You would find your own place in the Sapphire Coast region — Bermagui, Tathra, Bega and the towns around them. The owners will help with local leads, and they know the area well, but the house is yours to sort.
- Sponsorship considered for the right chef. Tell us your work rights when you register and we’ll be straight with you about what that opens.
- Couples are welcome. There is casual front-of-house work on site for a partner, and the owners will work with other local businesses to build consistent hours if that’s what a partner needs.
Who this is for
A chef who wants to build their craft under a strong head chef, and who turns up and cooks the same dish the same way on a Tuesday as on a Saturday. Reliability and consistency matter here more than where you’ve worked.
You’ll need:
- Section experience in a quality kitchen.
- The right to work in Australia, or eligibility for employer sponsorship.
- A car. It’s regional — about twenty minutes to the nearest towns, and no bus is going to get you to a dinner service.
The area
The Sapphire Coast is the far south coast of New South Wales — Tathra, Bermagui and Merimbula, beaches and surf you can have to yourself midweek, national parks either side, and a run of wineries along the same roads. It’s about two and a half hours to Canberra. The community is genuinely small, which is the whole appeal for some people and the reason others last a summer.
