The role

The Sir George at Jugiong is taking on a full-time apprentice cook: a Certificate III in Commercial Cookery, learned on the job in a new, high-volume pub kitchen with trade school alongside. It’s an apprenticeship, not a season.

The kitchen has four Rational combi ovens, sous vide and cryovac, a charcoal oven and a bread mixer on the way, and the cooking is built on local produce. A function centre is being built, and a micro-butchery and kitchen garden are planned, so there is more to learn each year.

What’s on offer

  • Full-time, paid at the Hospitality Award apprentice rate for your year of the apprenticeship, with adult apprentice rates from 21, plus superannuation.
  • Certificate III in Commercial Cookery. The training provider and the release arrangement are confirmed at offer.
  • A private room in staff housing, $150 a week.

Who this is for

If you’re local, you can start green: a real interest in cooking and turning up for every shift is enough. If you’re coming from further away, a second or third year already underway is preferred, and basic knife skills and kitchen etiquette are the minimum.

You’ll need:

  • The right to work in Australia for the length of the apprenticeship.
  • A car helps. The nearest towns are about 40 km away, and staff without one carpool on days off.

The pub

The Sir George is a restored 1850s pub on the Murrumbidgee at Jugiong, just off the Hume Highway, with luxury rooms in the old stone stables and barns, a bar, a beer garden and function spaces. Gundagai, Cootamundra and Harden are about 40 km away; Canberra and Wagga Wagga about 120 km.
